Baking Memories: Recipe for amazing cinnamon bread
By Teresa Cruise/Contributor
This recipe was a great find.
It uses my favorite old stand-by — yellow cake mix as a starter for this amazing bread.
I have never seen a recipe using a cake mix to which you added yeast and flour. I was skeptical, to say the least, but I wanted to try it. I am so glad I did.
This recipe makes two loaves of delicious, moist cinnamon bread. I will be making this
often.
Ingredients
1 pkg. yellow cake mix (I use Duncan Hines)
2 pkgs. yeast
5 cups flour
2 1/2 cups warm water
Butter
Sugar
Cinnamon
Directions
In a large bowl, mix together the cake mix, yeast and flour. Add the water and combine thoroughly.
Divide dough in half and roll each portion flat.
Dot with butter and sprinkle generously with cinnamon and sugar.
Roll dough up tight and place in greased ( I use Pam) loaf pans.
Cover pans with a couple kitchen towels and let rise on your counter for two hours.
Bake at 375 degrees for 35 minutes or until brown.
Brush top of loaves with butter and let cool on wire rack.
